This week my husband will be gone for dinner one night, so I'm taking advantage of his absence to cook something that he doesn't like, but that the girls and I are crazy about-- fried rice! I sneak away for lunch at a little Thai restaurant down the street about once a week, and pineapple fried rice is one of my go-to dishes there. I loooooooove it. We'll see how a homemade version turns out!
Other than that, I'm still slowly working on cleaning out the freezer and pantry. The problem is that I just keep adding things back....I'll make banana muffins when I've got some too ripe bananas, or I'll see something at the store at a rock-bottom stock-up price that I've got to get. I'll get there eventually.
fruit served every day
toast and jelly
pancakes and muffins from the freezer
sunbutter and jelly sandwiches
Blue Ribbon Granola Bars (We went through 3 batches last week! I need to start making them less delicious.)
cheese and crackers
Kale and Lentil Soup
Pineapple Fried Rice from Damn Delicious (I'm so excited to try this recipe!)
"Real" Mac and Cheese
