I'm entering week 3 of trying to eat from my freezer and pantry, and I'm finally starting to see some clear space in my freezer and a little bit of breathing room in my pantry. Hooray! I may only have to keep this up for another couple of weeks. I'm anxious to be done so that I can get back to my regular cooking and baking.
In the meantime, here is my rather humdrum menu for the week, designed to whittle down the freezer and accommodate my diverse group of eaters, all while maintaining my sanity during a busy week!
Breakfastfruit served every day
pancakes (from the freezer)
toast (bread from the freezer)
sunbutter and jelly sandwiches (bread from the freezer)
mac and cheese
homemade pizza pinwheels (from the freezer)
Blue Ribbon Granola Bars (My crew ate through one batch in 36 hours this weekend!)
cheese and crackers
packaged granola bars
Not-Too-Bad-For-You Pasta Alfredo and steamed broccoli
stir fry and rice, with BBQ chicken for husband (veggies and chicken from freezer)
pizza (for my gal's 4th birthday party)
Anniversary dinner out on the town!
Sweet Bitesapple pie (part of our United States preschool theme this week, also conveniently uses some pie crust from the freezer!)
cupcakes (for the aforementioned birthday party)
